Southwest stuffed peppers

I had this recipe pinned on Pinterest but when I went to make it, sadly the link did not work anymore. I have a pretty good memory so I just winged it and they turned out amazing.



Ingredients:
4-6 bell peppers
Olive oil
1/2 lb hamburger
1 cup chopped onion
2 cups cooked brown rice
1 can black beans
2/4 cup frozen corn
2 cups salsa
1/2 package of taco seasoning or about 1/8 cup
1 cup shredded cheese

Preheat oven to 400 degrees. Cut bell peppers in half and clean them out. Place them cut side up in a baking dish and brush with olive oil. Put in oven until cooked, approximately 20 minutes.
While those are cooking heat 1 Tbsp oil in a skillet and sauté onions for 4-5 minutes. Add hamburger and cook until done.
In a large bowl combine hamburger and onion, cooked rice, black beans, corn, salsa, and taco seasoning. Mix well.
When the peppers are done pull then out of the oven and let cool for 5 minutes. Scoop mixture into peppers. I had my peppers overflowing. Place back in oven for 15 minutes. Take out of the oven, sprinkle with cheese and put back in oven for 5 minutes.
Top with sour cream and enjoy.
